I was drawn to Hildegard by her music, and then by her environmental writing, some 30 years ago. I taught her in a first-year seminar. Jim once walked in the woods near her conveconvent. But I didn't know she praised spelt!

Yes, the spelt. That is indeed how I came to Hildegard googling for old bread recipes :-) She was very versed also in the healing sciences and what is called today "monastic medicine." Part of this medicine is prevention, dietary and a healthy life style. Thus she was praising spelt as part of it. It was the time when eating bread was actually healthy!
I love the picture of the bee on the flower. It is a fine metaphor for partnership.
